Before there were refrigerators and ice makers, the last pale ale was brewed in March(s . This was cooled with natural ice. For the extraction of ice, two methods were common. Often, blocks of ice were cut from the ice of so-called "Eisweihern" - small lakes and were stored in the cellars of the brewery. The second method has given the Eiszäpfle his name. A large wooden structure was sprayed with water , so that formed icicles on the outriggers. This could then be cut off and used to cool the beer.
